Soul Food-Greens
1 bunch collard greens 1 bunch mustard greens 1 bunch turnip greens - or any combination you can find - 3 bunches
Chop up some bacon and fry it crisp in a large pot. Remove the bacon and saute a medium yellow onion in the fat. Make sure you wash the greens well, they can be sandy. Remove the coarse stems, tear the leaves into pieces, wilt them in the pot, add water about halfway filling the pot. Add the bacon and a clump of brown sugar the size of a hens egg. Simmer the greens an hour and a half to two hours. Best with corn bread and pork chops.
