Summer Grilled Vegetables
Yield: 6 servings

1 aubergine, sliced into thick rings
1 yellow pepper, seeded and quartered
1 red pepper, seeded and quartered
3 courgettes, sliced lengthwise
1 bulb fennel, sliced
1 Spanish onion, cut in wedges
3 tablespoons olive oil
2 tablespoons pesto
fresh basil leaves, to garnish

Preheat the grill (broiler) to a medium setting. Brush the vegetables
with olive oil and grill in batches until cooked and browned. The
onions and courgettes will take the longest to cook. Keep warm.
Toss the vegetables in the pesto and serve warm or cold. Garnish
with the fresh basil.
