Harvard Beets
1 Tbsp shortening 1 Tbsp all purpose flour 2 Tbsp boiling water 3 Tbsp brown sugar 2 Tbsp vinegar 1/4 tsp salt dash of pepper, mace, and powdered cloves 1 1/4 cups of cooked beets, diced 2 pounds of medium sized beets, cleaned and scrubbed
Melt shortening on top of double boiler directly over heat. Add flour and let bubble for 3 mins. Add boiling water slowly and stir until smooth. Add sugar, vinegar, seasonings, spices until blended well. Add beets and let it stand over the boiling water until the whole dish is very hot.
