HONEYED GREENS

6 cups assorted green vegetables (courgettes, leeks, celery, asparagus
or cabbage, broccoli or cauliflower floret, chopped green pepper or
bean sprouts)

2 Tbs honey
2 Tbs vinegar
1 Tbs oil
1 Tbs finely grated ginger

Stir-fry the vegetables for 8 - 10 minutes or until tender but
still slightly crisp. Mix all the honey dressing ingredients
together and gently heat in a saucepan or microwave until the honey
is melted. Pour the hot dressing over the warm vegetables. Serve
immediately.
