Latkes
3 smallish potatoes, roughly chopped (no need to peel) 1/4 medium onion, roughly chopped 1 egg pepper to taste salt to taste Put potatoes, onion, egg and seasonings in processor with metal blade. Process until very finely chopped, but don't puree. Fry over moderate heat in 1/8" or so of oil.
Serve with applesauce or sour cream (and caviar if desired).
