Leek/Potato cakes

2 cups leftover mashed potato
(2) medium leeks, washed well and sliced thinly
Self-rising flour
1/2 cup shredded Sharp Cheddar (optional)
vegetable oil

Mix mashed potato, leeks, cheese and enough flour (1/2-1 cup) to
bind into a dry mix. shape into patties, and dredge in flour. Heat
a frying pat with oil. Place patties into hot oil and fry until
brown (your liking), then turn onto other side and continue browning.

Let the cakes "set" before turning over, or you'll have a sort of
mash stir-fry. not bad, but a bit messy.
