Maple Glazed Carrots

1 1/2 lbs whole baby carrots
3 tbsp butter
1/2 c maple syrup
1/2 tsp salt
2 tbsp chopped parsley or mint

Cook carrots in boiling, salted water until almost tender. Drain,
reserving 1/4 c liquid. Melt butter and roll the v\carrots in it.
Add reserved liquid, maple syrup and salt. Cook uncovered, until
liquid is thickened and carrots are tender - about 10 minutes.
Sprinkle with parsley or mint. Serves 6
