12 ears tender fresh corn
1/2 cup butter
1 onion, chopped
1 bell pepper, chopped
2 tomatoes (pealed and chopped)
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon sugar
In a large bowl, cut corn off cob and scrape cobs to get all the
juice; set aside. Heat butter in a Dutch oven; add onion, bell
pepper, and tomatoes. Saute until tender (about 10 minutes). Add
corn, sugar, and seasonings. Cook mixture until corn is tender.
Yields 12 servings as a side dish.
