Onion Rings in Beer Batter Yield: 8 servings
2 lb onions ice water all purpose flour vegetable oil for deep frying beer batter 1 1/2 c all purpose flour 1 ts salt 1 1/2 c beer 1 ts vegetable oil 1/4 c chopped fresh parsley
Peel onions and cut into 1/4 inch slices; soak in ice-water for 1 hour. Beer Batter: Combine flour and salt, stir in beer, oil and parsley. Beat until smooth. Let stand for 1 hour. Drain onion rings; dry on paper towels and coat with flour. In a large skillet or deep fryer, heat about 3 inches of oil to 375F.
Dip onion rings in Beer Batter to coat completely. Fry in oil for about 3 minutes or until lightly browned, turning once or twice. Drain on paper towels. Arrange in napkin lined basket and serve.
