Onion Rings

6 medium Bermuda or mild onions, sliced 1/4" thick
1 slightly beaten egg
1 cup milk
3 Tbsp cooking oil
1 cup plus 2 TBS. all-purpose flour
1/2 tsp. salt
cooking oil for deep frying

Separate onions into rings, set aside. In a bowl combine egg, milk
, 3 TBS. oil, flour and 1/2 tsp. salt. Beat just until well
moistened. Using a fork, dip onion rings into batter-drain off
excess batter. Add to hot oil (about 375:). Fry onions in a single
layer stirring with a fork to keep them separated. When they are
golden brown about 2-3 minutes, remove from oil and drain on paper
towels. Sprinkle with salt and serve.
