Fried Onions

2 eggs
2 tablespoons oil
1 1/4 teaspoon salt
1/8 teaspoon turmeric (for color)
1 cup flat beer
2 cups flour
1/4 teaspoon baking powder
1 teaspoon garlic powder

Whisk eggs, oil, salt, turmeric, beer, flour and garlic powder
together until the batter is smooth. Reftigerate for at least 8
hours. Slice onions about 1/4 of an inch thick. Separate into
rings. Heat oil to 360 degrees. Dip a few onion rings into batter.
Fry until golden brown on both sides. Drain on paper towels.
Place on a wire rack on a cookie sheet in a 275 degree oven. Salt
before serving. If you have any left over, they can be frozen and
reheated in the oven.
