Beer Batter Onion Rings 3/4 cup corn starch 1/4 cup flour 1 teaspoon baking powder 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 cup water (soda water works great in this) 1 egg, slightly beaten In bowl stir together the first 5 ingredients. Add water and egg; stir till smooth. Pour about 1 quart oil into large skillet to only about 1/3 full. Heat to about 375F. Dip up to 4 cups of cut up vegetables or boneless skinless chicken breasts and fish (cut into 1/4" cubes) in this, place a few at a time in hot oil. Stir batter occasionally between dunkings. Fry 2-3 minutes turning once till golden brown. Drain on paper towels.
Notes:
For herb batter add 1 teaspoon dried herbs or 1 clove garlic minced.
For beer batter follow basic recipe and omit water and add 1/3 cup beer (not flat).
