Piselli al Prosciutto (Peas and Ham, Umbria, Italy Style) (for 4 people) 800 grs. of peas (shelled) 1 medium onion (sliced) 50 grs. of butter 1 cup of vegetable broth 1/2 teaspoon of sugar 100 grs. of prosciutto (diced) salt In a pan, gently saute the onion in butter (be careful not to brown the butter). Add the peas and cook them on low flame Now and then, add some spoons of broth. When the peas are half done, season with salt to taste Add the sugar and the diced ham. Continue cooking, uncovered, the peas until done, stirring from time to time. Add more broth if necessary.
