Potato Pancakes

7 or 8 large long white potatoes, grated (do not use a food processor)
2 eggs
Salt to taste
2 Tbsps. evaporated milk (this will keep them from turning black)

Grate potatoes and drain liquid into a bowl. Pour off liquid in
bowl carefully and return the starch settled at the bottom to the
grated potatoes. Add all other ingredients. Using a very large
spoon, spoon mixture into a large skillet that has been greased
with lard, forming mixture into pancakes. Brown both sides very
very well on both sides or pancakes will be gummy. Serve with sour
cream. Makes about 7 or 8

VARIATION: Add grated onion, if desired.
