Cold mashed potatoes

egg salt pepper finely chopped onion
Mix together about 2 cups of mashed potatoes, an egg, a dash of salt and pepper, and as little or much onion as you like (none is acceptable). Flatten into pancakes about 3/4 of an inch thick. Fry in a bit of margarine or butter until both sides are nicely browned and the center is hot. Serve as a side, or a light meal/snack if you like.
