Potatoe Pancakes

5 large potatoes 2 1/2 tsp salt 1 tsp pepper 1 large onion 1/2 cup matzo meal
(using a food processor speeds this along dramatically) Coarsely grate potatoes into a large bowl. Grate in onions. Add salt and pepper and mix everything together. There will be a lot of liquid left in the bottom of the bowl, you can dump this out now. Adding the matzo meal will help to bind it together better when you form into patties. Now form flat patties out of the mixture. Place a skillet over a medium heat and in a thin layer of vegetable oil or margarine, fry the pancakes until golden brown on both sides. Place on paper towels to sop up the extra grease. Add applesauce or any other yummy toppings.
