POTATO PUDDING (Kartofshka Pynding) Russia
3 large potatoes, grated
1 large onion, grated
1/4 cup dairy sour cream
1 cup flour
2 egg yolks,beaten
salt and pepper to taste
2 egg whites, beaten stiff
Combine potatoes, onion, and sour cream. Sift in flour. Mix well.
add egg yolks and seasoning. Mix well. Fold in egg whites. Turn
into greased 9 inch pie pan. Bake at 350 deg F. for 30 minutes.
Serve with spiced applesauce. Serves 4-6
