Potatoes with Bleu Cheese

5 or 6 medium potatoes, peeled and sliced
1 small onion, diced
1 tsp. salt
pepper
3 Tbsp Imported Bleu Cheese (crumbled)
Heavy Cream (approx. 2 to 2 1/4 cups)

Spray a rectangular casserole dish with cooking spray. Put a layer
of potatoes on bottom of dish. Sprinkle half the onion, half the
salt, half the cheese and some pepper over potatoes. Repeat layering
once more. Pour cream over potatoes until it is about halfway up
dish. Bake at 350 for 2 hours. Cover with foil once potatoes are
browned.
