Potato Dauphinoise
2-2.5 pounds boiling potatoes 1.5 cup milk 1 lg clove garlic, pressed salt white pepper 2 or more Tbsp butter
Preheat oven 425 F Peel potatoes and slice 1/8" thick. Drop into cold water. Bring 1 cup milk to boil. Add garlic, 1/4 tsp salt and pinch of pepper. Drain potatoes and put into baking dish. Pour milk over them. Milk should come 3/4 the way up the potatoes. (Add more milk if needed). Top with butter cut into bits. Bake until browned and milk is almost completely absorbed (about 25 minutes).
