CRUSTY PUFFED POTATOES
Serves two

4 small red potatoes
1 teaspoon olive oil
1 teaspoon course salt

Preheat oven to 475 degrees F.

Rinse potatoes and dry well; rub them with olive oil and cut each
one in half. Sprinkle cut sides with salt. Place potatoes on a
baking rack and let stand for ten minutes so the salt can draw out
some water.

Bake on baking rack (not on a baking sheet) on middle oven rack
until cooked through, about 20 minutes.

Increase temperature to 500 degrees F. and bake until puffed and
golden-brown, about five minutes more.
