Pumpkin Puree

Cut the pumpkin in half, scoop out the seeds and place flat side
down on a cookie sheet. Bake at 350 degrees about an hour or until
the rind sinks down when you press on it. (Usually it looks almost
burnt at this point.) Scoop out the cooked pumpkin and use it in
place of the canned in any recipe.
