La Ratatouille

4 courgettes
2 aubergines
2 red peppers
olive oil
garlic
1 onion
parsley
8 tomatoes
2 sugar cubes
cinnamon
olive oil
salt
pepper

Cut the courgettes, aubergines and red peppers in small pieces.
Saute each separately in olive oil. Salt
and pepper to taste.

Cut all the tomatoes in small pieces, mix them with the garlic,
onion and parsley. Add sugar and cinnamon. Simmer for 15 minutes.

When the sauce is ready, mix it with all the vegetables in a big
dish and put everything in oven at 350F for at least 20 minutes.

As you want to serve it, put some basil on the dish in order to
add another colour (and another taste) to this healthy dish.

Note: This dish will be tastier the day after. It is better when
it is reheated!
