Roasting Beets

Preheat oven to 400 degrees Fahrenheit.

Trim all but the last inch of stems from beets. Trim any dangling
roots and wash beets to remove any excess dirt. Wrap beets in
aluminum foil and place them in a large baking dish.

Roast beets until tender enough to slide a metal skewer all the
way through them, approximately one hour. Unwrap beets and let
them cool slightly.

Hold the beets with paper towels and rub them gently to remove the
skin.

Note: You can also roast unpeeled onions in the same baking pan as
the beets.
