Roasted Chestnuts 01

ROASTED CHESTNUTS
1 pound chestnuts 1/4 cup (1/2 stick) butter salt cinnamon (optional)
Cut a 1/2-inch crisscross gash on the flat side of each nut. Make sure the gash cuts thru the shell, because they can explode if you don't. Put the nuts in a shallow baking pan. Bake about 25-30 minutes in a 375-F oven. They have a little give when they are done. Remove from oven and wait a few minutes until they are not too hot, then peel the shell and inner fuzzy part off. I use the pick that comes with a nutcracker set and find it very helpful in removing the shells. Place them in a skillet with a few pats of butter and saute them over high heat until the butter is melted and the chestnuts are well coated. Place skillet in a 400-F oven and roast until they are golden on top. Sprinkle with a little salt and cinnamon. They can be served as a dessert with eggnog or vanilla ice cream or just serve them salted as a snack.
