Easy Roasted Vegetables

1 red bell pepper, cored, and seeded
1 yellow bell pepper, cored, and seeded
1 orange bell pepper, cored, and seeded
1 green bell pepper, cored, and seeded
4 lg. carrots, peeled, cut in half lengthwise, cut into 1/4" strips
1 small purple onoion, cut into 1/4" slices
3 small red potatoes, cut into 1/4" slices
1/4 cup extra virgin olive oil

Pre-heat oven to 400F. Cut all bell peppers into 1/4" strips.
Place all vegetables into a large mixing bowl. Add olive oil and
toss to coat vegetables evenly.

Spray a large cookie sheet with non stick cooking spray. Place
vegetables evenly over cookie sheet. Sprinkle vegetables with
garlic and onion power. Place cookie sheet in oven, on center
rack. Rost vegetables for 35 to 40 minutes. Remove from oven,
add salt to taste, and serve.

Should make enough for 4 people as a side dish.

I like this recipe so much, I serve it as a main dish.
