Rosemary Cheese Crusted Potatoes
Serves: 6

1 thinly sliced onion
1 T. olive oil
3 minced cloves garlic
4 lg. russet potatoes, peeled and diced
1 t. seasoned salt
1/8 t. cracked black pepper
1/8 t. grated lemon rind
2 C. (8 oz.) fancy sharp shredded Cheddar cheese, divided
1/4 C. dry bread crumbs
1 T. melted butter
1/2 t. rosemary

Heat oven to 400F. In lg. skillet, cook onions in oil 5 minutes or
till tender. Add garlic, cook 1 minute. Stir in potatoes, salt,
pepper and lemon rind; remove from heat. Layer half of potato
mixture into greased 1 1/2 qt. casserole dish; sprinkle with 1/2
C. cheese. Repeat layers. Combine bread crumbs, butter and
rosemary. Sprinkle over cheese. Cover and bake for 40 minutes.
Uncover and bake 20 minutes more till heated through and browned.
