Scalloped Potatoes

4 potatoes, peeled and cut into 1/4 inch slices
3 Tbsps. all purpose flour
1 Tbsp. unsalted butter, cut into small pieces
1-1/2 cups lowfat milk, scalded

Preheat oven to 400 F. Place potatoes in a steamer basket over
boiling water. Cover saucepan and steam 4-5 minutes. Arrange half
the potatoes in a single layer in a buttered casserole dish. Season
with salt and pepper to taste. Sprinkle with half the flour and
half the butter. Top with remaining potatoes and repeat process.
Pour hot milk over potato slices until top is almost covered. Bake
50 minutes or until potatoes are tender. Makes 4 servings.
