STUFFED SCALLOPED TOMATOES
(2 Servings)

2 medium tomatoes (about 3/4 pound)
Vegetable cooking spray
2 Tbsp diced onion
1/2 tsp brown sugar
1/4 tsp salt
1/4 tsp pepper
2/3 cup soft breadcrumbs, toasted
1 Tbsp grated Parmesan cheese

Cut tops from tomatoes; chop tops and set aside. Scoop out pulp,
leaving shells intact. Reserve pulp. Coat a non-stick skillet with
cooking spray; place over medium-high heat until hot. Add onion,
and saute until tender.

Add chopped tomato tops, reserved tomato pulp, brown sugar, and
next 3 ingredients; stir well, and remove from heat.

Spoon stuffing mixture into tomato shells, and place in an 8-inch
square baking dish coated with cooking spray. Sprinkle with Parmesan
cheese, and bake at 350 degrees for 10 minutes or until thoroughly
heated.
