Spinach with Raisin and Pine Nuts

50g(2 oz) seedless raisins or sultanas 900g(2 lb) fresh spinach, thoroughly washed and trimmed 3 tablespoons olive oil 1 small garlic glove, crushed 3 tablespoons pinenuts salt freshly ground black pepper Croutons to garnish
Poor some boiling water over the raisins/sultanas and leave them to plump up, while you cook the spinach. Do this by packing it into a large saucepan, adding just a little boiling water and a sprinkle of salt. if young spinach blanch for a couple of moments if older they may take longer Drain well in a colander, squeezing out the liquid. now chop it roughly.
Heat the oil in a large frying pan and saute the garlic gently for a couple of minutes. Add the spinach, pine nuts and drained, soaked raisins/sultanas. Season with a little more salt if it is needed and some freshly ground black pepper. Cook gently for about 5 mins the serve with croutons sprinkled over it. Maybe used as an entree or as a side dish
