Sauteed Spinach

olive oil or butter
shallot, finely minced
1 clove garlic
salt
pepper
1 or two wedges lemon juice
a splash of white wine
fresh, washed and dried spinach

In large pan, heat either olive oil or butter, saute finely minced
shallot and garlic in large pan, taking care not to burn. (use
about 1 clove of garlic for 2 servings spinach.) Add salt and
pepper, lemon juice, and white wine. Stir this well, then place
double handfuls of spinach into pan, tossing well with the sauteed
lemon juice mixture. Leave on only long enough to wilt slightly.
Serve immediately.
