Squash with Mustard Sauce

(for four persons)
1 kg. (2.2 pounds) pared squash (butternut best)
1 onion
4 Tbsp. oil
2 tomatoes, skinned & chopped
3/4 cup sour creme (or plain yoghurt or crème fraiche)
2 tsp. grain mustard
1 cup alfalfa sprouts, or cress
Cut squash into 2 cm (1 inch) size cubes.
Chop onion and sauté in oil until transparent. Add squash and 2 tbsp. water, cover, and cook on low heat for about 20 min., or until squash is just tender, stirring occasionally. Add tomatoes. Season with salt and pepper, simmer five minutes.
Mix sour crème/yoghurt with mustard.
To serve: Spoon squash mixture onto plates; spoon sauce on top, then sprinkle with sprouts or cress.
