Stuffed Squash
Last night I took a buttercup squash, cut it in half, scooped out the seeds. Put both halves in the microwave and cooked them. While they were microwaving, I cut up an onion and some garlic and sauteed them in some leftover chicken broth. Then I cut up some lamb and added that. Soaked a handful of shiitake mushrooms, sliced them and added those plus the soaking liquid. For spices I put in a bit of sage, a bit of thyme and some hot pepper sauce.
Since this was a "nothing-to-eat-in-the-house" dish, I took some bread crumbs from the freezer and mixed it all well, making sure not to make it too dry. I grated about 1/2 cup of some white Mexican cheese in, mixed and stuffed the squash halves. Baked at 350F for around 40 minutes covered with foil.
