Baked Tomatoes with Orzo and Olives
Yield: 8 servings

4 lg tomatoes, halved, hollowed
3 c cooked orzo
1/4 c olives chopped
1 t garlic, finely minced
3 T basil, or parsley chopped
3 t pine nuts toasted
1 T olive oil
1/4 c Parmesan cheese

Preheat oven to 350 degrees or grill.

Halve and hollow tomatoes, place in a baking dish. Mix the rest
of the ingredients except the cheese together in a small bowl and
season with salt and pepper to taste. Carefully stuff the tomatoes
and sprinkle with cheese. Bake for 20 minutes and serve.
