Succotash with Squash
Split seed and peel one butternut squash. Cut into large (1") dice. Place in glass baking dish and toss with a little oil. Roast in 400 degree oven stirring several times until barely tender and corners are browned. Meanwhile, dice a large onion in similar size chunks and saute it with and several whole fresh, rosemary branches. Add equal quantities of fresh, green lima beans (or if using frozen, thaw first), and whole kernel sweet corn. Add squash and mix well. Add about 1/4 cup of vegetable broth and sprinkle top with a little coarse salt. Return to oven until vegetables are tender and slightly carmelized.
