Sweet Potato Balls

mashed sweet potatoes, seasoned with spices, brown sugar, and 1 egg
marshmallows
hand-crushed corn flakes (not the commercial corn flake crumbs
hot oil for deep frying

Combine mashed sweet potatoes, spices, and brown sugar to taste.
Mix in 1 egg and mix thoroughly. Chill mixture until easy to
handle.

Enclose each individual marshmallow in a layer of potato mixture,
roll in corn flake crumbs, and place on baking tray until all are
formed. Chill in refrigerator until complete cold and firm to
touch.

Deep fry in hot oil until nicely browned, drain on paper towels,
and serve piping hot. The exterior will be crunchy and the center
melted and creamy.
