Sweet and Sour Carrots
(4 - 6 portions)

3 medium carrots
2 green peppers
1 egg

4 Tbsp red dry wine
4 Tbsp vinegar
2 Tbsp soy sauce
2 Tbsp water
4 Tbsp sugar
1 Tbsp corn starch

4 Tbsp oil

Cut carrots into thin slivers, dice green peppers. Mix egg in bowl.
Mix sauce in different bowl. Heat 2 Tbsp oil in pan. Fry egg in
hot oil like an omelet. Roll up and slice into long strips. Add
more oil to pan. Put in peppers stir fry for about 1 1/2 min. until
deep in color. Remove from pan. In same pan add carrots stir fry
for 3 min. Return peppers to the pan. Pour sauce over the vegetables
and heat till thickens and veggies are glazed. Add egg pieces and
serve hot.
