Twice Baked Potatoes 17

Twice-Baked Potatoes 4 potatoes, large, baking ones 1 ounce butter salt and pepper 1 egg, separated 2 ounces cheese - grated 4 ounces bacon (smoked) - diced
Preheat the oven to Gas Mark 6. Rub the outside of the potatoes with olive oil and salt and bake in the oven for about 1 hour. Fry the bacon until crisp. When baked, cut a thin lengthwise slice off each potato. Carefully scoop out the potatoes into a bowl leaving the shell intact. Beat the potato with butter, salt and pepper and the egg yolk. Add the cheese and bacon and mix well. Stiffly whisk the egg white and fold into the mixture. Spoon the mixture into the potato shells, pilling it up on top and sprinkling with a little extra cheese. Place the potatoes on a baking sheet and cook in the oven for 15-20 minutes.
