Zesty Carrots

6 large carrots, scraped, cut in half and then sliced julienne

1/4 cup reserved liquid
2 Tbsp prepared horseradish
2 Tbsp butter
1 tsp salt
1/4 tsp pepper
1/2 cup Miracle Whip
2 Tbsp grated or fine chopped onion

Cook carrots (covered) in about 1" boiling water with a little salt
just until tender. Drain but reserve liquid.

Combine reserved liquid, horseradish, butter, salt, pepper, miracle
whip and onion. Mix gently with cooked carrots. Pour into buttered
baking dish. Cover top with 1/4 - 1/2 Cup dry bread crumbs.
Sprinkle with parmesan cheese and dot with butter. Bake at 375F
for 20 minutes or 350 for about 30-35 minutes. Serves 6.
