Zucchini Pancakes

Zucchini Pancakes
2 cups grated zucchini
1 cup grated carrot
1/2 cup grated onion
2 eggs
1 tsp. baking powder
salt and pepper to taste
1 cup flour
Mix all ingredients together in order. Make pancakes in frying pan.
Flip to brown on both sides. Serve with sour cream or parmesan
cheese.
