Bean Burgers Yield: 8 servings
4 whole wheat bread slices 16 oz can vegetarian refried beans 1 c millet or brown rice; cooked 1/4 c oats, quick-cooking 1/4 c tomato paste 1/2 ts garlic powder 1/2 ts salt 1 tb arrowroot 3 ts onion, finely minced
Process bread, one slice at a time, in a dry blender to form soft crumbs. Mix all ingredients together well. Form into 8 patties. Brown on each side in a vegetable-oil sprayed non-stick skillet. Serve as is or on whole wheat buns with lettuce, sprouts and ketchup, if desired.
