Vegan Biscuit Mix

6 c. Unbleached white flour
3 T. Baking powder
3 T. Sucanat
1 T. Sea salt
1 c. Non-dairy margarine

In a large mixing bowl combine thoroughly the dry ingredients. Sift
it all together 6 to 8 times. Work in the margarine with your
fingers until the mixture is the consistency of very fine gravel.
Store in a tightly covered container at room termperature for up
to 4 months. Tape 2 or 3 whole bay leaves to the inside of the
lid to keep away bugs.


Drop Biscuits

2 1/4 c. Biscuit Mix
2/3 c. Cashew milk

Mix into a dough and beat for 30 seconds. Drop by spoonfuls onto
an ungreased baking sheet. Bake at 450 degrees for 8 to 10 minutes
until golden brown.


Sweet Muffins

2 c. Biscuit Mix
1/3 c. Sucanat
2/3 c. Cashew milk
2 T. Corn oil

Mix all ingredients together until just moistened. Spoon into
greased muffin pans and bake at 400 degrees for about 15 minutes,
until brown. Variation: After mixing muffin batter, fold in 3/4
cup bluberries.


Pancakes

2 c. Biscuit Mix
1 c. Cashew milk or water
2 N'eggs (or equivalents)

Beat the ingredients until smooth and pour by scant 1/4 cupfuls
onto a hot griddle (oiled if necessary). Cook until the edges are
dry, then turn over and cook until golden brown.


All-Purpose N'egg

This formula equals one egg

2 T. Gluten flour, or unbleached white flour
1 1/2 tsp. Corn oil
1/2 tsp. Baking powder
2 T. Water

Combine thoroughly. Use right away, because the baking powder loses
its effectiveness within 2 hours.
