Golden "Chicken" Patties
2 15-oz cans garbanzo beans (chickpeas), drained (reserve liquid)
1 1/2 cups uncooked quick cooking oats
2 cloves garlic, minced
1/2 teaspoon ground cumin
1/4 teaspoon red pepper
vegetable oil or nonstick cooking spray
veg gravy, mushroom gravy, cranberry sauce, etc.
In a food processor or blender, process beans with about 1/2 cup
of reserved liquid, adding more liquid if necessary, to make a
smooth paste. Add garlic, cumin, red pepper, salt & pepper and
process to combine well.
In a medium mixing bowl, combine bean paste mixture with oats.
Mix well, adding additional bean liquid or oats as necessary to
make a mixture that holds together well and keeps its shape.
Shape mixture into 8 patties about 1/2" thick. Heat oil in a
skillet or spray a nonstick skillet with cooking spray. Over medium
high heat, cook patties until golden brown on each side, about 5
Serve topped with vegetarian gravy, mushroom gravy, cranberry sauce,
or other topping of choice.
OTHER OPTIONS: Serve patties on a bun with "burger" toppings &
condiments. Mixture can also be shaped into "nuggets" or "fingers"
and fried until golden.
