CREAM OF CAULIFLOWER AND POTATO SOUP

1 small cauliflower
1 onion
1 lb (500g) potatoes
3 3/4 cups vegetable stock or water
1/2 lb (225g) soft or medium tofu
salt and pepper to taste
chopped parsley

Chop cauliflower, onion and potatoes into dice, cover and cook in
the stock or water until very soft. Cool briefly, then pour into
a blender of food processor, add tofu, and blend thoroughly. Return
mixture to saucepan, season to taste and reheat gently. Serve
topped with chopped parsley.
