VEGETARIAN BURGERS

1/4 cup bulgur wheat
1 cup boiling water
1 small onion, minced
3 cloves garlic, minced
15 sprigs parsley, minced
2 eggs

2 T plain yogurt
1 t salt
1/2 t black pepper
1/2 t cumin
1/2 t cayenne pepper
1/2 cup bread crumbs

3 cups cooked Garbanzo Beans
1 T Oil

Place bulgur in 1 qt. Bowl & cover with boiling water. Let rest
30 minutes. Drain.

Place bulgur with all remaining ingredients except bread crumbs &
oil in a blender or food processor. Puree to a smooth paste.
Shape cup into a patty & pat on bread crumbs, repeat with remaining
mixture. Chill for 1 hour.

To cook in a skillet, heat oil over medium heat, add burgers and
saut for 7 minutes. Turn over and saute on other side 3 minutes.
Or grill 3 minutes each side.
