Tofu Chocolate Pudding/Mousse/Pie Filling

10 oz semisweet chocolate chips (vegan: barley-malt-sweetened nondairy chips) 2 10.5-oz packages of Mori Nu silken or silken firm tofu 3 Tbs maple syrup (or other liquid sweetener; or less, to taste)
Melt chocolate chips in a double boiler over low heat or in microwave (if you know what you're doing). Put tofu, sweetener, and melted chocolate into a blender and process until very smooth. Pour into a serving bowl or bowls and refrigerate, covered, for at least a couple of hours. Cover well.
Note: if your budget allows, use a really good vegan chocolate bar (like Rapunzel Organic Bittersweet) instead of some or all of the chips.

I used to purchase a chocolate mousse at a high
end super market that caters to vegetarians and vegans. I bought a mousse that is equal to this one in flavor and consistency. It cost $6.99 per pound and I had to travel far to get it. This costs a fraction of the expensive one and to tell the truth you can not tell them apart. This is an excellant mousse and if you serve it to friends they will not know they are not getting the real thing.
