Chocolate Mousse Pie

10 oz. semi-sweet chocolate
16 oz. silken tofu (in the aseptic pkg)
4 Tbs. maple syrup
1 tsp. vanilla
1 graham cracker crust
fruit for garnish (strawberries are good)

Melt the chocolate in a double boiler (or in a pan set over another
pan of boiling water). Stir the syrup and the vanilla into the
melted chocolate. Blend the tofu in a food processor until smooth,
and then add the chocolate mixture. Pour into the crust, refrigerate
until chilled, and then garnish with fruit.
