Chocolate Cake 03

Five Minute Chocolate Cake
1 cup sugar
1 1/2 cups unsifted flour
1/2 tsp salt
1/4 cup cocoa
1 tsp baking soda
1 tbsp. lemon juice
1/3 cup oil
1 tsp. vanilla
1 cup cold water
Mix ingredients in order given. Pour into ungreased square (9")
cake pan. Bake 30-35 minute at 350F. Frost or serve plain with
ice/whipped cream.
Vegan Chocolate Icing
icing sugar
cocoa
1 tsp. brandy
few drops vanilla
margarine (low/no salt)
Mix together icing sugar and cocoa in proportions for light brown
colour.
Add brandy and vanilla. Start adding margarine, beating with a
fork. Beat well after each addition until mixture is well and
truly mixed through. Continue 'til mixture is spreadable but still
fluffy.
Can be used as filler and/or covering outside; sprinkle with cocnut
or dark chocolate shavings if desired.
