Funny Face Cupcakes

1 1/4 c unbleached or whole wheat pastry flour
3/4 c cocoa or carob powder
1 T baking powder
1/2 tsp. salt
1/2 c softened butter or applesauce
3 eggs or egg replacer
2/3 c soya or rice milk
1 t vanilla
assorted candies

1/3 c butter
1/3 c cocoa or carob powder
1/2 t vanilla
3 c sifted icing sugar
3 T soya or rice milk

Set 22 large paper baking cups in muffin tins. Sift together flour,
cocoa, baking powder and salt. Cream butter; gradually add sugar.
Add eggs one at a time, beating well after each addition. Add
sifted dry ingredients to creamed mixture alternately with milk
and vanilla, combining lightly after each addition. Divide batter
evenly among baking cups. Bake in preheated oven at 350 for 20-25
minutes. Cool and frost.

To make frosting: Melt butter in a saucepan. Remove from heat.
Stir in cocoa and vanilla. Alternately blend in sifted icing sugar
and milk until frosting is smooth and of spreading consistency.
Use candies to make funny faces.
