Egg Free French Toast

6 slices whole wheat bread
1 cup (reduced fat) soy milk 2 Tbs flour 1 Tbs nutritional yeast flakes 1 tsp sugar or sweetener of your choice 1 tsp vanilla 1/2 tsp. salt pinch of nutmeg
Blend or whisk in shallow bowl milk, flour, yeast flakes, sugar, vanilla, salt and nutmeg.
Dip the bread slices into the milk mixture, and cook either on a non-stick griddle (or normally greased griddle if you are not too concerned about fat) until browned on both sides; or on a greased cookie sheet in a 400 degree oven until golden on both sides, turning once. For an interesting change of pace, bake the toast in a non-stick waffle iron until golden brown.
