French Toast 1 cup raw cashews 1 cup vanilla soy milk (full fat, not reduced) 1/2 tsp cinnamon powder pinch ground cardamom pinch ground nutmeg Blend the ingredients in a blender or food processor until smooth. Use good (firm crusted) whole wheat bread - the best is one risen with sourdough or levain starters.
Soak slices in wide bowl mix and remove with slotted spatula. When batter stops running and reduces to a drip, place the drenched toast to a wide fry pan just coated with canola or other high-temp oil, sun/safflower oils work.
Heat of pan should be medium-high, but not smoking when you place the toast in. If the pan is to hot it will stick, too cold, it will just keep getting soggy. When it is light-to-medium brown, flip over and let it finish cooking. If it is soggy inside when both sides are brown, you are cooking too fast/too hot. Best when it is firm, but moist inside.
